Welcome to my little corner of the world. I am so honored by your visit today. My name is Kristi and I am married to my college sweetheart(I refer to him here as "Mr. Incredible"), momma to my 2 beautiful girls who are growing much too quickly, a high school computer teacher, photographer, and a gardener (at times~right now I'm growing weeds). I love to laugh, drink strong Starbucks coffee, take pictures, and be anywhere my family is. Jesus is my Savior and I try so hard to be the wife and momma that He has called me to be. I often fail but He lovingly picks me up, dusts me off, and encourages me that with Him all things are possible. Blue Cheese Pork Chops by Dortheri Lenay Bolden

Pork Chops (I like the boneless, thin ones)
Bottle of Blue Cheese Salad Dressing

In a crock-pot, place pork chops and season to taste. Pour blue cheese dressing over the top. Place lid on top, set crock-pot to low and cook for 6-8 hours or so, until done. Enjoy!

Ham & Cheese Frittata from Calf Fries to Caviar Cookbook

Melt in one quart baking dish: 2 T butter

Combine & pour into baking dish:

6 eggs

1 C chopped ham or Canadian bacon

1/3 C chopped green onion

1/3 C Mayonnaise

1/4 C milk

1/2 t salt

pepper

dash of Tabasco

1/4 t Worcestershire Sauce

Bake in preheated 350 degree oven for 15 to 20 minutes. When eggs are set, remove from oven, and top with 1 C grated Mozzarella or Monterrey Jack Cheese. Return to oven until melted. Cut into wedges and serve warm. (Makes 4 servings).

The menu looks delish! Especially the Pesto Chicken... I have some leftover pesto from this weekend, I might have to use make extra chicken for the soup and try the pesto chicken to take for work...

The strawberry chicken sounds intriguing. There's a restaurant I know of that makes strawberry chicken and it tastes a lot like sweet & sour. I might have to try it especially since it looks so easy.

I want to try the chicken with strawberry dipping idea! My husband loves blue cheese dressing, I will have to make the pork chop dish for him! Everything sounds great!

Thank you so much for visiting my blog and weighing in on my computer decision!

After much thought, I ended up choosing to buy a Macbook. I'm in that uncomfortable learning phase that a PC user goes through with a Mac but hopefully I'll be up and running well soon.
